# Expert Advice:

01 -
  • It tastes like a fancy café drink but costs almost nothing and takes less time than driving to get one.
  • The brown sugar adds a deep caramel flavor that makes it feel richer and more grown-up than the original version.
  • You can make it with whatever milk you have on hand, dairy or not, and it always works.
02 -
  • If your mixture isn't thickening, check that you're using instant coffee and not ground, ground coffee will never whip no matter how long you try.
  • Don't add extra water thinking it'll help, the ratio of coffee to sugar to water is what makes it whip, more liquid just makes it runny.
03 -
  • An electric mixer cuts the whisking time in half and saves your arm, but a hand whisk works perfectly if you commit to it for the full few minutes.
  • Taste the whipped coffee before you layer it, if it's too bitter for you, whisk in an extra half tablespoon of brown sugar until it's just right.
