# How To Make:

01 - Preheat the oven to 425°F (220°C).
02 - In a large mixing bowl, combine the halved baby potatoes, sliced bell peppers, and red onion with olive oil, minced garlic, dried oregano, dried thyme, smoked paprika, salt, black pepper, and red pepper flakes if using. Toss until everything is evenly coated.
03 - Spread the seasoned vegetables evenly on a large rimmed baking sheet and nestle the Italian sausages among them.
04 - Roast in the preheated oven for 35 minutes. Halfway through, flip the sausages and stir the vegetables to ensure even cooking. Continue until potatoes are golden and tender, and sausages reach an internal temperature of 160°F (71°C).
05 - Remove the tray from the oven and allow the sausages and vegetables to rest for 5 minutes. Garnish with chopped fresh parsley and serve with lemon wedges if desired.
