# Expert Advice:

01 -
  • It takes the comfort of a grilled cheese and makes it feel like a treat without any extra effort.
  • The fresh basil adds a brightness that cuts through the richness in a way dried herbs never could.
  • You can make it with what you already have and still impress anyone who tries it.
02 -
  • Pat your tomato slices dry with a paper towel before layering them, or the moisture will steam the bread and ruin the crisp.
  • Medium heat is your friend, rushing it on high heat burns the outside and leaves the cheese cold in the middle.
  • Fresh mozzarella releases water as it melts, so don't overload the sandwich or it will get soggy.
03 -
  • Use a cast iron skillet if you have one, it holds heat evenly and gives you the crispiest crust.
  • If your cheese isn't melting fast enough, cover the pan with a lid for the last minute to trap the heat.
  • Let the butter come to room temperature before spreading, cold butter tears the bread and spreads unevenly.
