A vibrant healthy appetizer featuring colorful carrot sticks served chilled in tall glasses&perfect for parties or snacking.

This simple dish was a hit at my last gathering with friends who appreciated the fresh crisp taste and colors.

  • Vegetables: 2 large orange carrots, 2 large yellow carrots, 2 large purple carrots, 2 large red carrots (or additional orange/yellow if unavailable)
  • Garnish & Serving: 4 tall glasses, Crushed ice (optional for chilling and presentation), Fresh parsley or dill sprigs (optional)

Instructions

Step 1:
Wash and peel all the carrots thoroughly.
Step 2:
Cut the carrots into uniform sticks approximately 10 cm (4 inches) long and 1 cm (½ inch) thick.
Step 3:
If desired place a layer of crushed ice in the bottom of each tall glass to keep the carrots crisp.
Step 4:
Arrange an equal mix of the different colored carrot sticks upright in each glass.
Step 5:
Garnish with a sprig of parsley or dill for color and aroma.
Step 6:
Serve immediately or cover and refrigerate until ready to serve.
