I first baked this banana nut bread as a cozy morning treat and it quickly became a family favorite.

Ingredients

  • Wet Ingredients: 3 large ripe bananas, mashed, 2 large eggs, room temperature, 120 ml (½ cup) unsalted butter, melted and cooled, 120 ml (½ cup) plain Greek yogurt or sour cream, 1 tsp pure vanilla extract
  • Dry Ingredients: 200 g (1⅔ cups) all-purpose flour, 150 g (¾ cup) granulated sugar, 1 tsp baking soda, ½ tsp salt, ½ tsp ground cinnamon (optional)
  • Nuts: 100 g (1 cup) walnuts, chopped

Instructions

Step 1:
Preheat the oven to 175°C (350°F). Grease a 9x5 inch (23x13 cm) loaf pan and line with parchment paper.
Step 2:
In a large bowl, whisk together mashed bananas, eggs, melted butter, Greek yogurt, and vanilla extract until smooth.
Step 3:
In a separate bowl, combine flour, sugar, baking soda, salt, and cinnamon.
